Chicken Pot with Aged Chinese Cooking Wine

Step 1
Soak the dried mushrooms until soft and slice. Slice the oyster mushroom and red chili pepper. Cut the celery and green onion into sections. Set aside.

Step 2
Cut chicken thigh meat into pieces. Marinate with 2 tbsp aged Chinese cooking wine, 1 tbsp dark soy sauce, 1 tbsp light soy sauce and sugar for 30 minutes.

Step 3
In a pan, add some oil on medium heat. Add the chicken thigh meat and sear until fragrant. Set aside.

Step 4
In another pan, add some oil on medium heat. Reduce to low heat and add black sesame oil. Add ginger, garlic and sauté until fragrant.

Step 5
Add chicken thigh meat, oyster mushroom, dried mushrooms and stir well.

Step 6
Add the remaining aged Chinese cooking wine, dark and light soy sauce, oyster sauce and rock sugar. Reduce to medium heat and bring it to boil. Cover the lid and cook for 10 minutes.

Step 7
Open the lid. Add red chili pepper, celery, green onion and stir well. Ready to serve.
