Step 1
Peel and slice the potato and carrot. Cut the onion and cabbage into pieces. Rinse and remove the stems of shimeji mushrooms. Slice the tofu and dice the green onion. Set aside.

Step 2
Bring a pot of water to boil. Add bonito and kombu powder. Stir and cook for 5 minutes.

Step 3
Add potato, onion and carrot. Cover the lid and cook for 15 minutes on medium heat.

Step 4
Add cabbage, shimeji mushrooms, tofu, salmon, white miso, mirin and bring to boil.

Step 5
Add sugar-free soy milk and heat for a while.

Step 6
Sprinkle with green onion. Ready to serve.
