Lyonnaise Salad

Regardless of the simple seasoning, this simple Lyonnaise salad well presents the uniqueness of Lyon.

Step 1
Bring a pot of water to boil, add white vinegar and reduce to medium low heat on a simmer stage. Swirl the water with a spoon to create a gentle whirlpool effect. Add the egg slowly and cook for 3 minutes or until set. Rinse, drain and cut the romaine lettuce and frisee into sections. Halve the cherry tomatoes.

Step 2
In a pan, add pancetta and sauté until fragrant on medium heat. Transfer to a plate.

Step 3
Layer romaine lettuce, frisee and cherry tomatoes on a plate.

Step 4
Layer poached egg on top. Sprinkle with pancetta, croutons and black pepper.

Step 5
Serve with red wine vinegar and olive oil.
