French Seared Flounder

The flounder has a delicate texture. Serve with the fresh white wine vinegar sauce, more appetizing!

Step by Step Instructions

Step 1
Chop the parsley and shallot. Dice the chilled butter and set aside.

Step 2
Rinse and pat the flounder dry. Season with salt and black pepper. Coat with a thin layer of all-purpose flour.

Step 3
In a pan, melt 20g butter on medium heat. Add flounder and sear until golden brown on both sides and cooked. Transfer to a plate.

Step 4
Cook the shallot, white wine and white wine vinegar on medium low heat until 2/3 is evaporated.

Step 5
Add remaining butter by a few times. Make sure butter and white wine mixture and combined well before adding more.

Step 6
Add whipping cream, salt and mix well. Drizzle over the flounder.

Step 7
Sprinkle with parsley. Ready to serve.
