Spanish Garlic Prawns in Olive Oil

Step by Step Instructions

Step 1
Peel the shrimps and reserve the heads and shells. Clean out the intestines. Put shrimps in a bowl. Finely minced 2 cloves of garlic and thinly sliced 3 cloves of garlic. Marinate the shrimps with minced garlic, 2 tablespoon of the olive oil and salt at room temperature.

Step 2
Add remaining olive oil frying pan. Heat over low heat and add in the shrimp shell, red chili flakes and the remaining 1 clove of garlic. Let the shells slowly cook in the oil to release their flavour, around 10 minutes.

Step 3
Strain the oil into a bowl and discard the heads, shells and the garlic. Set aside the oil.

Step 4
Return the shrimp oil into the same frying pan and over medium heat. Add the sliced garlic and cook, stirring constantly until the garlic is a pale golden brown, about 1 minute.

Step 5
Add the shrimp to the pan and cook. Toss and stirring until the shrimp are just cooked through.

Step 6
Season with some salt, black pepper, red chili flakes and chopped parsley. Transfer to a plate.

Step 7
Add shrimp oil and garlic slices. Serve with lemon wedges.
