Baked Tomatoes Stuffed with Bell Pepper and Quinoa

Step by Step Instructions

Step 1
Preheat an oven to 180°C. Cover a baking tray with foil and set aside.

Step 2
Chop basil leaves, red, green and yellow bell peppers.

Step 3
Bring red quinoa and a pot of water to boil on medium heat. Cover the lid, reduce to medium low heat and cook for 12-15 minutes. Remove from heat and set aside.

Step 4
Cut the top of the tomatoes, scoop out the seed and make a hole.

Step 5
Mix together red quinoa, bell peppers, corn kernel, basil leaves, salt and black pepper.

Step 6
Stuff into the tomatoes and place on the baking tray. Sprinkle with parmesan cheese.

Step 7
Bake for 10-12 minutes or until golden brown on the surface. Ready to serve.
