Step 1
In a pot, add the sake, mirin, sugar and bring it to simmer.

Step 2
Add the white miso and whisk until it dissolved. Turn off the heat and mix in the shio koji.

Step 3
Place the fish and the marinade in the zipper bag and refrigerate overnight.

Step 4
Preheat the oven to 200°C. Place the cod fish in the oven and bake it for 12-15 minutes or until the fish is cooked.

Step 5
Sprinkle with green onion and ready to serve.
