Chayote Melon Soup with Water Chestnut and Fig

Chayote melon is very healthy. Cook together with sweet water chestnuts and carrot into a soup good for cooling our body heat.

Step 1
Seed and cut the chayote melons into pieces. Halve the water chestnuts. Peel and cut the carrot into pieces. Rinse and soak the figs, sweet and bitter apricot.

Step 2
In a pot of water, add pork bone and blanch until the water boiled. Drain and set aside.

Step 3
Bring chayote melons, carrot, water chestnut, pork bone, figs, sweet and bitter apricot and water to boil on medium heat.

Step 4
Cover the lid, reduce to medium low heat and cook for 1.5 hour.

Step 5
Season with some salt and ready to serve.
