Step 1
Cut the grouper fish fillet into pieces. Seed and cut the bell peppers into pieces. Cut the onion into pieces. Mince the garlic and set aside.

Step 2
Marinate the fillet with salt, 1/2 tsp sugar, ground white pepper, Chinese cooking wine, corn starch, egg white and oil for 10 minutes.

Step 3
In a pan, add some oil on medium heat. Add fillet and stir-fry until cooked.

Step 4
In the same pan, add some oil. Add ginger, garlic and sauté until fragrant. Add fermented black beans, onion and sauté until fragrant.

Step 5
Add bell peppers and fish fillet. Mix well and ready to serve.
