Preheat the oven to 190°C. Cover the baking tray with foil.

Clean the portobello mushrooms with kitchen paper and remove the stems. Place on the baking tray. Season with black pepper and drizzle some olive oil over.

Place a slice of parma ham and beat an egg on top.

Step 4
Bake for 15-20 minutes and until the egg is set.

Step 5
Remove from the oven and sprinkle with parsley. Ready to serve.
