This Black Pepper Crab is in Singaporean style. The fragrance of black pepper is intense and tempting. A dish goes well with rice particularly.

Step 1
Chop the garlic. Slice the shallots. Julienne the onion and cut the green onion into sections.

Step 2
Rinse and clean the crabs. Chop them into pieces.

Step 3
In a pan, add some oil on medium heat. Add garlic, shallots, ginger, and sauté until fragrant.

Step 4
Increase to medium high heat. Add black pepper and sauté until fragrant. Add crabs and stir-fry for 2 minutes.

Step 5
Pour in Chinese cooking wine around the edge of the pan. Add light soy sauce, dark soy sauce, sugar and water. Bring to boil on medium heat.

Step 6
Reduce to medium low heat. Cover the lid and cook for 8-10 minutes or until the crabs are cooked.

Step 7
Add green onion, sesame oil and mix well. Add corn starch water and cook until the sauce is thickened. Ready to serve.
