Thick Soup Scallop and Mushroom

This kind of soup is exceptionally easy to cook yet very yummy. Dried scallops are high in nutritional value as well.

Step 1
Soak and shred the dried scallops. Soak the dried mushrooms, remove the stems and julienne. Soak and julienne the bamboo fungus. Chop the Chinese cured ham. Cut the chives into sections.

Step 2
In a pot, bring chicken broth and water to boil.

Step 3
Add scallops, mushrooms, bamboo fungus and Chinese cured ham to boil. Reduce to medium low heat and cook for 15-20 minutes.

Step 4
Add water chestnut water and mix well. Cook until thickened. Add chives and cook for 1 minute. Ready to serve.
