Steamed Lotus Leaf Wrapped Dried Seafood Fried Rice

The fried rice absorbs the flavour of all dried seafood. Steam it over the lotus leave gives another layer of fragrance to the dish.

Step 1
Soak and shred the dried scallops. Reserve the dried scallop water and set aside. Soak the dried mushrooms, remove the stems and julienne. Soak the dried shrimps. Soak the dried squids and dice. Mince the garlic.

Step 2
Soak the lotus leaf until soft and set aside.

Step 3
In a pan, add some oil on medium heat. Add garlic and ginger. Sauté until fragrant.

Step 4
Add scallops, mushrooms, shrimps and squids. Sauté until fragrant.

Step 5
Add leftover rice and mix well. Add some dried scallop water and stir-fry until the rice absorbed the water.

Step 6
Add dark soy sauce, salt and mix well. Place the rice on the lotus leaf and steam for 30 minutes on medium high heat. Ready to serve.
