Dry-fried Chicken and Shimeji Mushrooms

Step 1
Rinse and chop the green onion, ginger and garlic.

Step 2
Rinse and tear the shimeji mushrooms.

Step 3
Heat some oil in a pan. Add dried pepper and Sichuan pepper. Sauté on low heat until turned colour. Remove from the pan and reserve the oil.

Step 4
Add green onion, ginger and garlic and sauté on medium heat until fragrant. Add mushrooms and sauté on medium low heat until soft and dried.

Step 5
Add chicken, black bean chili sauce and salt. Stir well then stir for 1-2 more minutes.

Step 6
Add peanuts and sesame. Stir well, remove from heat and ready to serve.
