Chilled Pig Ear in Hot and Spicy Sauce

The marinated pig ears are chewy and go exceptionally well with the hot and spicy sauce.

Step by Step Instructions

Step 1
Rinse and clean the pig ears. Julienne the cucumber. Cut the green onions into sections. Chop the red chilies and cilantro. Crush the Chinese black cardamom.

Step 2
Bring water to boil. Add ginger, green onions, pig ears and blanch the pig ears for 20 minutes. Drain and set aside.

Step 3
Bring white vinegar and 800mL water to boil. Add pig ears and blanch for another 15 minutes. Transfer to ice water and let cool.

Step 4
In a pot, add all the Chinese marinade ingredients and bring to boil. Add pig ears and bring to boil. Cover the lid and cook for 1 hour on medium low heat.

Step 5
Let cool and julienne.

Step 6
Mix all the hot and spicy sauce ingredients together. Add pig ears and mix well. Refrigerate for a few hours. Serve with cucumber.
