Dice garlic, red chili and cilantro. Slice the vegetarian chicken.

Step 2
Blanch vegetarian chicken in boiling water for 1 minute. Drain and set aside.

Place eggplant slices on a plate and steam for 5 minutes on high heat.

Step 4
Prepare the sauce. Mix together garlic, red chili, coriander, light soy sauce, sugar, sesame oil and black vinegar.

Step 5
Put sliced eggplant and vegetarian chicken in a bowl. Drizzle with the sauce. Mix well and ready to serve.
