Pine Nut, Taro and Chicken Rice

Step by Step Instructions

Step 1
Dice the taro, chicken thigh meat and carrot. Soak the dried shiitake mushrooms until soft, remove the stems and slice. Rinse and soak the dried shrimps.

Step 2
Marinate the chicken thigh meat and dried shiitake mushrooms with dark soy sauce, 1 tbsp light soy sauce, Chinese cooking wine, ground white pepper and sugar for 30 minutes.

Step 3
Heat a pan on medium heat. Add pine nuts and cook until golden brown. Set aside.

Step 4
In the same pan, heat some oil. Add taro, sear until golden brown and set aside.

Step 5
In the same pan, add some oil. Add shiitake mushrooms, dried shrimps and sauté until fragrant. Add carrot and sauté until fragrant.

Step 6
In a cooker, add Grain01 and water. Place chicken, shiitake mushrooms, taro, carrot, dried shrimps on top and start cooking.

Step 7
Cook until done, add pine nuts and mix well. Ready to serve.
