Grilled Vegetable Salad

Step 1
Cut the zucchini, red pepper and red onion into medium size

Step 2
Cut the potato into medium size

Step 3
Cut the pumpkin in half, and remove the seeds

Step 4
Cut it with the same size as the potatoes

Step 5
Combine all the vegetable in a large mixing bowl, season with salt, pepper, Italian seasoning and drizzle with olive oil, toss well

Step 6
Transfer the vegetable into the baking pan. Preheat the oven to 180C, and place the baking pan and bake the vegetable for about 15-20 minutes or until the vegetable is tender

Step 7
In another mixing bowl, combine the dressing ingredients, whisk until all ingredients is emulsified

Step 8
Combine together the grilled vegetable and the dressing in the large bowl, toss well and serve on the platter
