Tomato and Spinach Quiche

cut the butter into small pieces

place in the mixing bowl. Add the flour and salt, use 2 forks to mix well

In the bowl, add 1 tbsp of ice water, add one whole egg and one egg yolk, whisk it together

Combine with the flour mixture and mix well

Clean and drain the spinach and cut it into 1” length, then place in the pan and sauté it until soft, season with salt

Cut the cherry tomato into half

In another mixing bowl, beat the eggs, cream and milk and whisk well

Layer the plastic wrap on the table and put the dough on top and cover with another layer of plastic wrap, roll the dough into ½ cm thick

Then slowly place the dough in the round baking pan

layer the baking paper on top and add black bean to give a pressure (can use rice or aby other kind of dried beans)

Preheat the oven to 185C and bake it for 15-20 minutes, remove the beans and bake until golden brown

Then add the filling in the pie, and pour the custard mixture into cooled crust

Add the cheese on top and sprinkle with salt and pepper
