Garlic Eggplant with Cured Duck Pot

Step by Step Instructions

Step 1
Minced the garlic and chopped the green onion

Step 2
Cut the eggplants into pieces and place in the salt water to prevent turning brown

Step 3
Blanch the duck leg in water for 5 minutes then cut into pieces

Step 4
In a pot, add oil enough for frying. Add the eggplants and deep fried for 30 seconds, drain and set aside

Step 5
In a shallow pan, add the duck leg and cook until the fat comes out

Step 6
Add garlic and dried chili pepper and cook until fragrant

Step 7
Add the eggplants and mix together. Season with Chinese cooking wine, sesame oil, white pepper, chicken broth and bring it to boil

Step 8
Transfer to clay pot, add rock sugar and reduce the heat to medium and cook it until the sauce is reduce by half
