Stir-fry Beef with Bitter Melon

Stir-fry Beef with Bitter Melon is a family dish. Usually melons are sweet, but bitter melon has a bittersweet flavor, it has a refreshing effect and its really suitable for summer.

Step by Step Instructions

Step 1
Cut the bitter melon in half, remove the seed and slice

Step 2
Sprinkle some salt to remove the excess bitter flavor for 10 minutes. Rinse it and set aside

Step 3
Peel and slice the carrot. Mince the garlic

Step 4
Soak the fermented black bean for 20 minutes. Drain and slightly chop

Step 5
Slice the beef and marinate with light soy sauce, sugar, corn starch and oil for 10 minutes

Step 6
In a pan, add some oil on a high heat. Sauté the beef almost cooked. Transfer to the plate and set aside

Step 7
In the same pan, add a little more oil and sauté the garlic and the black bean until fragrant

Step 8
Add the bitter melon and carrot, cook for 3-4 minutes until tender

Step 9
Add the chicken broth and the beef back

Step 10
Cook until the sauce has thicken, add sugar and white pepper to season
