Clean and cut the cucumber into strips; Cut the green pepper into rings; Cut the red pepper into shreds; mince onion; slice ginger.

Step 2
Put the prepared green pepper and cucumber into a container marinate with some salt for 10-15 minutes.

Step 3
Heat some oil in pan on high heat, saute ginger, Sichuan pepper, red pepper until fragrant. Turn to low heat, add soy sauce, brown sugar, vinegar and some water, heat until boil. Set aside.

Step 4
Compress the pickled cucumber and green pepper to take off extract water. Clean with water and compress again.
