Peel and cut the onion into pieces

Clean and cut the tomato into wedges

Step 3
Slice the lemongrass in bias and tear the lime leaves in half

Chop the red bird chili

Remove the leaf from the basil and chop

Clean and cut the soft shell crab in half. Place the crab in the milk and soak it for 10 minutes. Drain and set aside

In a mixing bowl, add the flour, salt and sugar. Gradually add the water and whisk to form the batter.Dip the crab in the batter then dredge it with the potato starch

In a pan, add enough oil to fry. Add the crab and fry until golden brown and crispy

In a pan, add some oil on a medium high heat. Sauté the onion, lemongrass and lime leaves until fragrant

Add the yellow curry paste and cook for a minute. Add the coconut milk, mix well and bring it to simmer

Add the tomato and cook until tender. Season with red bird chili, lime juice, fish sauce and sugar
