Step 1
Peel the potatoes. Set a mandoline slicer to 1/16 inch and slice all the potatoes.

Step 2
Prepare an 8-inch cast iron pot or baking tray. Trim a sheet of parchment paper and place it inside.

Step 3
Preheat the oven to 200ºC.

Step 4
Thin slice the yellow onions. Melt the 1/2 of unsalted butter in a large pan over medium heat. Add the onion slices and cook for 5 minutes. Remove from heat, and add the potatoes.

Step 5
Toss the potatoes until well-coated in butter and onions. Season with black pepper.

Step 6
Carefully add all of the ingredients to the baking tray. Cover with baking paper and put into the oven.

Step 7
Bake for about 50 minutes, or until golden brown. Cool down at room temperature, serve with sour cream, paprika, spring onion, and parsley.
