Step 1
Mince the garlic and slice the red chili pepper.

Step 2
In a mixing bowl, mash the fermented bean curd. Add the Chinese cooking wine, sugar, corn starch, sesame oil, white pepper and mix together.

Step 3
Cut the chicken in to pieces.

Step 4
Add the chicken, garlic, ginger, red chili pepper to the fermented bean curd mixture and marinate for 15 minutes.

Step 5
Transfer the chicken to the plate and steam it for 15-20 minutes or until the chicken is fully cooked.

Step 6
Sprinkle with the green onion and ready to serve.
