For Chinese soup, there are quite a lot of variation with beetroot. With corn, carrot and cashew nut, this soup is tasty and healthy.

Step 1
Soak the dried orange peel and cashew nuts until soft.

Step 2
Wash and peel the beetroots. Cut the beetroots into pieces.

Step 3
Peel and cut the onion and carrot into pieces.

Step 4
In a pot, add the beetroots, onion, carrot, corn, cashew nuts, dried orange peel and water.Bring the water to boil and reduce the heat to medium and cook it for 30 minutes, season with salt.

Step 5
Ready to serve.
