For Biangbiang Noodle
Step by Step Instructions

Step 1
加入醬汁、蛋絲、青瓜絲、紅菜頭絲、花生米及芫茜葉,灑上芝麻,即成。

Step 2
把醒过的面团,放在擀面垫上,揉压10分钟,再包起来静置20分钟, 至少重复5 次(表面会呈现越来越光滑),最后再静置30分钟。

Step 3
Making Biangbiang Noodle: In a bowl, add all-purpose flour, salt and mix well. Add cold water and mix into a dough. Place on a mat and knead until smooth. Place into a bowl and cover with plastic wrap. Let rest for 20 minutes.

Step 4
Place the proofed dough on the mat and knead for 10 minutes. Wrap and rest for 20 minutes. Repeat this step at least 5 times (to smoothen the dough). Let rest for 30 minutes.

Step 5
Roll the dough into a log and divide into 12 parts. Roll into olive shape and place onto a tray. Spread some oil on the surface and wrap with plastic wrap. Let rest for at least 60 minutes.

Step 6
Flatten the dough and use the chopstick to slightly press in the middle to form a line. Pull to lengthen the dough and tear apart along the pressed line (slowly and gently). Repeat until all dough is done.

Step 7
MakingSichuan Style Chilly Oil: In a pot, add some oil. Sauté the Sichuan peppers, star anises and bay leaves. Add green onion, minced garlic and stir-fry 1-2 minutes.

Step 8
Add chili powder, other spices and fry for 1-2 minutes. Add the remaining oil, stir well and bring to boil. Remove from heat. Add light soy sauce and whisk together.

Step 9
Let cool and keep in an air-tight container.

Step 10
MakingNoodle with Sauce: Beat an egg with some water. Fry into a flat layer. Let cool, slice and set aside.

Step 11
Prepare the sauce. Combine together the sesame paste, peanut paste, Sichuan style chilly oil, light soy sauce, black mature vinegar, sesame oil, sugar and hot water. Set aside.
