Roasting the spring chicken with lemon, honey and herbs is an ideal idea! The chicken is tender and juicy. The vegetables absorb the juice of chicken, giving an additional fragrance to the dish.

Step 1
Preheat the oven to 200°C. Mix together butter, rosemaryleaves, lemon zest, salt and black pepper.

Step 2
Stuffthe chicken with 1/2 spice butter.

Step 3
Brush the chicken with lemon juice. Coat with the remaining spice butter and 1/2 honey. Marinate for 2 hours.

Step 4
Placebaby potatoes, red onion and carrot onto a baking tray. Season with sea salt, black pepper and olive oil. 6.

Step 5
Place the spring chicken on top. Cover with foil and bake for 40 minutes.

Step 6
Remove the foil. Brush the chicken with the remaining honey. Bake for 10-12 minutes until golden brown. Ready to serve.
