Step by Step Instructions

Step 1
Preheat the oven to 180ºC. Remove the beetroot stem.

Step 2
Wrap the beetroot with foil and place in the oven. Check every 15 minutes until the beetroot is tender. (about an hour)

Step 3
Let cool, peel the skin and slice.

Step 4
Prepare the sauce. Peel and finely chop the shallot. Mince the ginger and chop the cilantro.

Step 5
Mix together the shallot, ginger, cilantro, sushi vinegar and garlic.

Step 6
Place the beetroot on the plate and drizzle the sauce over. Ready to serve.
