Beautifying Red Dates Pudding

Step 1
Wash the red dates and remove the pits.

Step 2
In a pot, combine the red dates with 800mL water. Boil on high heat for 10 minutes, and then simmer on medium heat for 30 minutes.

Step 3
Remove red dates and sift the soup into a bowl, add rock sugar and boil on low heat until rock sugar dissolved.

Step 4
In a mixing bowl, combine water chestnut flour with 500mL water. Mix until smooth.

Step 5
Allow the red dates soup to cool for 5 minutes. While the soup is still hot, pour into the water chestnut mixture. Stir constantly while mixing the two mixtures together.

Step 6
Pour 1/3 the red dates pudding mixture into desired mold.

Step 7
Steam over water on high heat for 8 minutes until fully set.

Step 8
Then pour another 1/3 and steam. Repeat until the mixtures are completely used up. Once the pudding is cooked. Allow to cool to room temperature or keep refrigerated. Slice and serve.
