Mouth-watering Mexican Beef Tacos skillet recipe that is so easy to prepare and is ready under 30 minutes! I have always loved quick meals that are not only delicious, but frugal as well. (=^.^=)

Looking for an excuse to party this weekend? A taco night is a party night. The build-it-yourself buffet-style allows everyone to create the perfect combination of ingredients before folding up and digging in. Whether you gravitate toward soft shells or crunchy, corn, flour, or whole-wheat tortillas, the base is only the beginning. It's a tasty and easy meal that's fun to eat.  ~ Meow ~ (=^.^=)

Step 1
Heat the oil over medium-high heat in a large frying pan. Add the onion and cook stirring for 2 minutes. Add the garlic and cook 1 minute. Add the minced beef, cook stirring and breaking the lumps up with a wooden spoon until the beef is browned (about 8-10 minutes). Add the seasoning and stir through.

Pour in the stock bring to boil, reduce heat and simmer for 10-15 minutes or until the stock has reduced and the mixture is thickened. Remove from heat.

Meanwhile, heat taco shells in the oven according to packet instructions.

Combine the avocado, lemon or lime rind and juice, coriander  in a bowl and season with salt and pepper, mix well.

To assemble, place some lettuce in the base of each taco. Top with minced beef mixture, cheese, tomato, guacamole, jalapenos and sour cream or salsa of your choice. Serve.

Tips
For the salsa sauce, mix the tomatoes with the lemon or lime juice, spring onion and coriander, then season carefully to taste. 

For the guacamole, mash the avocados with a fork. Squeeze in the lime juice, add the Creme Fraiche, season, and gently mix it all up.
