This is a Suchuan style dish, very spicy and colorful. Usually this noodle would use some meat, but this time we use some vegetables to replace meat, and let vegetarians could enjoy this stasty noodle as well.

Cut bak choy

Step 4
Then slice ginger

Step 5
Prepare a pot of water to blanch the bak choy

Then blanch the bean sprouts

Prepare another pot of water

Step 8
Cook the noodles until soft

Boil broth

Step 10
Add bak choy and bean sprouts

Pour broth on top

Then add noodles

Finally, top with chopped cilantro, sesame oil, and chili oil
