Slice the tomatoes.

Slice the eggplant.

For the dressing, combine garlic, pine nuts, diced tomato and basil inside a blender. Add olive oil, blend until smooth.

In a baking tray, arrange bell peppers, onions, eggplant, cucumber and tomato. Add olive oil and salt on top.

Serve baked vegetables with a piece of lasagna noodles with a tablespoon of dressing on top.

Best served at room temperature as an appetizer.
