Taiwanese Egg Pancake with Green Onion and Bacon

Egg pancake is commonly found in breakfast restaurant in Taiwan. The soft pancake is very tasty with green onions and eggs.

Step by Step Instructions

Step 1
Sear the bacon until cooked, dice the green onions, halve the sliced cheese and set aside.

Step 2
Sieve the all-purpose flour and potato starch. Make a well in the middle, add warm water gradually and combine until no lumps.

Step 3
Add green onions, salt and mix well. Set for 10-15 minutes.

Step 4
In a pan, add some oil on medium heat. Brush some oil on the pan with kitchen paper. Add the batter and sear until half-cooked on medium low heat. Transfer to a plate.

Step 5
Slightly beat the eggs. In the same pan, add the egg wash and sear until half-cooked. Add a piece of pancake and sear until cooked.

Step 6
Flip the pancake. Layer bacon, pork floss and cheese on top.

Step 7
Remove from heat. Roll the pancake and cut into pieces. Ready to serve.
