Step 1
Shred the pomelo pulp. Shell and devein the prawns. Chop the cilantro and set aside.

Step 2
Bring a pot of water to boil. Blanch prawns, drain and set aside.

Step 3
Mix together the lime juice, fish sauce, sugar, red chili pepper, cilantro and water.

Step 4
Mix together the pomelo, peanuts and sauces.

Step 5
Add the prawns and sprinkle with fried shallot.

Ready to serve
