Braised Rack of Lamb
Recipe Details
Rack of lamb contains evenly in fat and lean part, meat is tender and light in smell. This is a best choice for the first time eater. Using variety of Chinese spices to make the rack of lamb, easy in cooking but gives a rich flavor which makes you non-stop eating.

Step by Step Instructions

Step 1
Clean and chop the cilantro. Peel and slice the ginger and garlic. Cut the leeks into section and chop the red chili pepper.

Step 2
Clean and cut the rack of lamb into pieces.

Step 3
In a pan, add half of the leeks and enough water. Blanch the lamb, drain and set aside.

Step 4
In a pan, add some oil and sear the lamb until golden brown on both sides. Add the ginger, garlic, leeks, red chili pepper, chili bean sauce and quick stir.

Step 5
Add water, Sichuan pepper, star anise, cumin seed, sugar, dark soy sauce and bring it to boil. Reduce the heat to low, cover the lid and cook for 20 minutes.

Step 6
Turn to high heat and cook until the sauce has thickened, season with salt.

Step 7
Sprinkle with cilantro and ready to serve.
