In a bowl, marinate the pork with light soy sauce, Chinese cooking wine, corn starch and white pepper for 20 minutes.

Slice the red and green chili. Cut the green onion into sections. Mince the garlic and ginger.

Peel and cut the potato into strips and place in water for 10 minutes. Drain and set aside.
