Okinawa Stir-fried Bitter Melon and Pork

This Japanese homey dish is seasoned with mirin, sake and Japanese soy sauce. It is a great idea to stir fry bitter melon with sliced pork.

Step 1
Seed the bitter melon, cut into pieces and marinate with salt for 10 minutes. Cut the tofu into pieces. Beat the egg and set aside.

Step 2
Bring a pot of water to boil. Add bitter melon and blanch for 1 minute. Drain and set aside.

Step 3
In a pan, add some oil on medium heat. Add the pork and stir-fry until 80% cooked.

Step 4
Add bitter melon, sake, mirin, Japanese soy sauce and stir-fry for 2 minutes.

Step 5
Add tofu and cook for 2 minutes.

Step 6
Add egg wash, cook until half-set and stir well.

Step 7
Sprinkle with bonito flakes and ready to serve.
