Thai Style Squash and Carrot Soup

Step by Step Instructions

Step 1
In a big soup pot, add some olive oil and butter. Add in chopped squash, carrots and onions and sauté for 5 minutes.

Step 2
Use the back of the knife to tap on the lemongrass stalks to release their oil. Add into pot along with the grated ginger and its juice and bay leaf.

Step 3
Stir to combine and add cook for 1 more minute. Add in chicken broth. then turn down to low heat to simmer for 20 minutes with cover on.

Step 4
Take out lemongrass and bay leaf. Blend the soup with a hand-held blender until smooth.

Step 5
Pour the soup back into the pot and cook on medium heat. Add in coconut milk and season with salt and white pepper.

Step 6
Serve in bowls and top with chopped chives and grated lime zest.
