Blueberry Yogurt and Chia Seed Pancake

Step 1
Sieve the flour. Mix with egg, skimmed milk and chia seed until smooth. Set aside for 20 minutes to let chia seed absorb water.

Step 2
Ladle the batter onto a pan and sear each side on medium heat for 4-5 minutes until golden brown.

Step 3
Transfer to a plate. Add yogurt and blueberries on top. Sprinkle with icing sugar and garnish with mint leaves. Ready to serve.
