Step by Step Instructions

Step 1
Cut zucchini, eggplant into ½” thick

Step 2
slice the tomato and mushroom

In a sauce pot, heat the oil and sauté the mushroom until soft

add the tomato sauce and cook until is simmer

Season with salt and pepper, off the heat and set aside

In a baking pan, brush the butter around

layer the zucchini at the bottom, then layer the tomato and eggplant on top

Pour the mushroom tomato sauce on top and sprinkle the mozzarella cheese

Then repeat the step until it reach about ¾ of the top and pour extra mushroom tomato sauce

top with grated parmesan cheese

Preheat the oven at 200, and bake it for 15 minutes until the vegetable is tender, and let cool

Cut the lasagna into six and serve
