Lotus Wrapped Crab over Rice in Bamboo Steamer

Step by Step Instructions

Step 1
Soak the lotus leaf until soft

Step 2
Soak both rice for at least 4-5 hours or overnight

Step 3
Soak the dried shrimp, scallop and mushroom until soft

Step 4
Small diced the mushroom

Step 5
Cut the Chinese sausage into small diced

Step 6
Rough chopped the garlic and shallot

Step 7
Combine both rice and steam it for 10-15 minutes about half way cook

n a skillet, add oil on a medium heat. Sauté the garlic and shallot until fragrant

Step 9
Add dried shrimp, scallop, mushroom and Chinese sausage. Season with sugar, white pepper and Chinese cooking wine. Cook for about 2-3 minutes

Add the rice mixture and crab meat paste, mix well. Season with sesame oil

Step 11
Squeeze off the liquid from the lotus leaf, and place it in the bamboo steamer

Step 12
Transfer the rice mixture to the lotus leaf

Step 13
Place the crab above and fold the lotus leaf to cover

Cover with the lid and steam it for 15 minutes on a medium high heat
