Roasted Rack of Lamb with Rosemary

Baked rack of lamb is one of the classic dish in western cooking and rosemary is the herb that cannot be missed. Simple combination with potato and vegetables then can become a dinner with lover along with a glass of red wine and enjoy a romantic dinner.

Step by Step Instructions

Step 1
Preheat the oven to 200°C. Clean and pat dry, season with salt, black pepper and marinate for 15 minutes.

Step 2
Remove the leaves off the rosemary and reserve 2 stem for garnish. Mix together the rosemary, garlic and finely chop.

Step 3
Spread the mixture over the lamb, cover with plastic and refrigerate for 40 minutes.

Step 4
Prepare the vegetable. Mince the garlic. Peel and cut the potato into pieces. Trim off the end of the asparagus.

Step 5
In a pot, melt the butter and sauté the garlic, add the potato and cook until golden brown and tender. Add the asparagus and stir well.

Step 6
Season with black pepper and salt. And cook until the vegetable is fully cooked and set aside.

Step 7
In a pan, add some olive oil and sear the lamb until golden brown on both sides.

Step 8
Transfer the lamb to the baking tray and bake it for 15-20 minutes until the lamb is fully cooked.

Step 9
Cover the bone end with foil and transfer to the plate with the vegetable. Garnish with rosemary stem and ready to serve.
