Step 1
Marinate the shrimp with minced garlic, salt, black pepper and some olive oil for 20 minutes.

Step 2
Cut the cherry tomatoes in half.

Step 3
In a pot, bring the water to boil and add some salt. Add the fusilli and cook for 8-10 minutes until soft. Drain and set aside.

Step 4
In a dry pan, toast the pine nut until fragrant and set aside.

Step 5
In the same pan. Add some olive oil and fry the shrimp until cook and set aside.

Step 6
In a pot, bring the water to boil and blanch the spinach until bright green, drain and set aside.

Step 7
Prepare the spinach pesto. Place the spinach, pine nuts, parmesan cheese, garlic, salt, black pepper, olive oil and blend well.

Step 8
In a bowl, combine the fusilli, spinach pesto sauce, shrimp, cherry tomatoes and toss well. Transfer to the plate.

Step 9
Sprinkle with pine nut, parmesan cheese and ready to serve.
