Thai Glass Noodle Salad

Nothing is better than having this Thai Glass Noodle Salad in the wet and dampish spring. This sour and spicy recipe can brighten you from the moody weather.

Step by Step Instructions

Step 1
Soak the glass noodle until soft, drain and set aside

Step 2
Slice the shallot and mince the garlic. Finely chop the lemongrass

Step 3
Prepare the dressing. Finely slice the lime leaves and chop the red bird chili

Step 4
In a stone grinder, grind the lime leaves, red bird chili, lime juice, garlic, fish sauce, sugar and water

Step 5
In a pot, bring the water to boil and cook the glass noodle until soft. Transfer to cold water to let cool. Drain and set aside

Step 6
In a pan, add some oil on a medium high heat. Sauté the shallot, garlic and lemongrass until fragrant

Step 7
Add the ground pork and cook until golden brown.

Step 8
Add the fish sauce, sugar and stir well. Turn off the heat and let cool

Step 9
In a bowl, toss together the glass noodle, pork mixture, toasted rice powder and the dressing

Step 10
Sprinkle with some cilantro and ready to serve
