Stir-fried Shredded Pork with Mustard Green and Dried Tofu over Crispy Noodle

This recipe we use rear hock, which is the cut of pork that comes from the back legs. It is a very inexpensive and tough piece of meat as the back legs has a high level of activity. It fits to cook low and slow, just like this recipe.

Step by Step Instructions

Step 1
Soak the mustard green in water for 20 minutes. Drain and cut into pieces. Slice the red chili pepper

Step 2
Shred the pork and marinate with Chinese cooking wine, light soy sauce, sugar, corn starch and white pepper for 15 minutes

Step 3
In a pot, bring the water to boil and slightly scald the noodle until loose and rinse it through cold water. Drain and set aside

In a pan, add some oil on a high heat. Spread the noodle evenly and pan fry until golden brown on one side about 5 minutes. Flip the noodle over and cook until golden brown and crispy on the other sid

In a pan, add some oil on a medium high heat. Sauté the garlic until fragrant. Add the pork and cook until half cooked;Add the mustard green, dried tofu, chicken broth and bring it to simmer

Step 6
Season with light soy sauce, sugar and sesame oil

Add the red chili pepper, pour it over the noodle and ready to serve
