Bitter Melon, Soy Bean with Figs and Pork Bone Soup

Bitter melon helps to clear away and relieve heat and sharpen the appetite. It is the best food to be consumed in summer.

Step by Step Instructions

Step 1
Soak the soy beans for 3-4 hours.

Step 2
Soak the dried figs for an hour.

Step 3
Remove the seed and cut the bitter melon into pieces.

Step 4
Marinate the bitter melon with some salt for 10 minutes and rinse it with water.

Step 5
In a pot, bring the water to boil and blanch the pork bone for 5-8 minutes. Drain and set aside.

Step 6
Place the pork bone, soy beans, figs and honey dates in the pot and enough water to cover all the ingredients.

Step 7
Bring the water to boil and reduce the heat to medium. Cover the lid and cook for an hour.

Step 8
Add the bitter melon and cook for another 30-45 minutes.

Step 9
Season with salt.

Step 10
Ready to serve.
