Step 1
Rinse and soak the mushrooms until soft. Save the mushroom liquid

Slice the shallot and ginger

Step 3
In a pan, add some oil on a medium heat, cook the sugar until caramelize

Step 4
Add the shallot, ginger and sauté until fragrant

Step 5
Add the mushrooms, Sichuan pepper, star anise, dried chili pepper, premium soy sauce and vegetarian oyster sauce

Step 6
Add the mushroom liquid and water until it covers the mushroom

Step 7
Bring it to boil then reduce the heat to low and cook for 1.5-2 hours until the sauce has thickened

Step 8
Drizzle with some sesame oil and toss well

Step 9
Ready to serve
