Purple Yam Milk Tart

Step by Step Instructions

Step 1
Preheat an oven to 190°C. Sprinkle some flour on the surface area and roll the dough to about 0.5cm thick.

Step 2
Cut into disc shape with a cookie cutter. Place the dough into tart molds. Slightly press and trim off the edge.

Step 3
Poke some holes with a fork to prevent puffing up. Bake for 8-10 minutes until golden brown. Let cool and set aside.

Step 4
In a pot, bring water to boil. Add purple yam and cook until softened. Peel and mash. Add whipping cream and mix well. Set side. Whisk the egg white. Add sweet potato flavoured milk and sugar. Mix well and sieve.

Step 5
Layer mashed purple yam on the tart. Pour egg white mixture until 4/5 full.

Step 6
Bake for another 12-15 minutes under 180°C until the egg batter is set. Let cool for 1-2 minutes and remove from the tart molds.
