Baked Lamb Rack with Herb Honey and Mustard Sauce

Step by Step Instructions

Step 1
Preheat an oven to 200°C. Cover a baking tray with foil.

Step 2
Chop the mint leaves, rosemary and thymes.

Step 3
Rinse and pat the lamb rack dry. Marinate with 1/2 rosemary, mint leaves, 1/2 thymes, salt and black pepper for 30 minutes.

Step 4
Mix together the remaining thymes, rosemary, breadcrumb and Parmesan cheese.

Step 5
In a pan, add some oil on medium heat. Add butter and cook until melted. Add lamb rack and sear until golden brown. Place on the baking tray.

Step 6
Mix together whole grain mustard and honey. Brush over the whole lamb rack.

Step 7
Coat the lamb rack with breadcrumb mixture and gently press.

Step 8
Bake for 30-35 minutes and set for 10 minutes. Slice and ready to serve.
